Whipped Tofu & Greens Toast

I keep meaning to post recipes. In the time between this post and the last (TWO YEARS!), I've made some delicious things, often followed by "I should post this on my blog!" And yet, here we are. I would love to say that I'll keep posting things here, but my best intentions aren't quite paying off. 

Also since my last post, I've lived a lot of life! Nicole and I have done some amazing travel, I've taken students on a research trip, I've met new friends and said goodbye as other friends have moved elsewhere, lost two kitty cats, I sold my house and Nicole and I bought a new house, and so much more! 

In the process of making our new house a home, we've spent some good time cooking together. However, we've also done a lot of home projects, in addition to our full time jobs, so sometimes we just need a quick and healthy dinner with foods we have on hand. Enter this whipped tofu and greens on toast recipe. We had some greens from CSA that needed to be used soon, but both wanted more than just greens. With a bit of back and forth, we landed on this experiment, which wowed us both and has returned multiple times. It's a surprisingly satisfying dinner, doesn't really heat up the kitchen the summer, and uses things we keep on hand. I hope you'll like it just as much as we do!

Maggie's Lazy Dinner Air Fryer Tofu Poppers

Almost two years since my last post here. Two years of life, love, work, growth, travel, and a whole lot of cooking! Here's a super brief summary of the past two years: I finalized my divorce after almost one year of separation, I finished up my role as interim dean and returned to teaching full time, and I've been dating my wonderful partner, Nicole. 

Meanwhile, I've been cooking a ton and hope to put more of those recipes here. Nicole has such a fun palate and loves to play with flavors and try new foods. Nicole isn't a cook, but is an amazing sous chef and has encouraged me to experiment with new flavors and recipes. Despite that, this first post back is not a great example of all the amazing new things I've been cooking. 

This post is an example that Lazy Dinners still happen and new tools open new avenues for them. Through Nicole, I have a new tool in my kitchen, an air fryer! Nicole had a large one and a small one, so brought the larger one to my place and kept the smaller one at home. These air fried tofu poppers were a "hmmm, let's see if this tastes good" idea that turned into an easy meal in regular rotation. Serve them with any dipping sauce you like - my favorite is a vegan sriracha mayo!

Maggie's Vegan Korean Beef/Rice Bowls

Hi friends. It's been a while. A looooooong while. The longest while between posts on my blog since I started it. So, here's the LesVegan scoop. 
  1. Late last spring, our dean announced she was leaving. She and the president worked on figuring out who could take on parts of the dean role, as it would have been impossible to find a permanent person to start by July first. Two colleagues and I were asked (and agreed) to split the role. That's taken a lot of time and has been a steep learning curve. 
  2. I've been, like most folks, bogged down by the emotional weight associated with swirling currents of a global pandemic, political uncertainty, and civil unrest (for good reason, when we look at continued pressure for racial justice in the US). 
  3. Shana and I separated and are finalizing a divorce. The separation was sudden and the number of adjustments one makes after being with the same person for 16.5 years leads to a lot of mental and emotional work. I'm thankful to have supportive friends and family and that I'd already had a well-established relationship with a therapist. I'm well-loved and thriving. 
All of those things, plus more, led to shifts in my cooking and not enough time or energy to keep posting recipes. BUT, I think I'm back (at least sporadically), even though all of the things above are still happening. 

Thus, here's a new recipe that's easy and speedy and delicious: vegan Korean beef & rice bowls. I was inspired trying to use up food I had in my house, which included a weirdly large number of bags of Gardein Beefless Ground. I didn't want tacos or sloppy joes or chili, so I turned to the internet, found some ideas, and a delicious dinner was the happy result. I hope it's a great weeknight meal for you!

Lazy Dinner Teriyaki Tips

Can you believe I haven't posted a "Lazy Dinner" post since 2017?  With COVID shifting schedules and working from home, it's not like we haven't been eating lazy dinners... so I'm not sure why I haven't posted an new one! 

Anyway, this recipe is a a quintessential Lazy Dinner. It's really quick (relying on a faux meat product), super easy, and delicious. Plus, its versatile! If you don't want Asian flavors one evening, use the same technique but switch to different flavors.

Maggie's Chickpea "Tuna" Salad

I talked about vegan potluck before and how much I love it. We haven't had our regular potluck since February and I miss the company, camaraderie, and cooking of our vegan potluck crew so much! As I kept thinking about our monthly gatherings, I'd remember a delicious dish from one month, a different dish from another month, and so on. But one dish kept popping up in my head. At the very first potluck she came to - years ago!, our friend Alissa brought a chickpea "tuna" salad. Everyone was amazed. As in, there was outright clamor for the recipe. Alissa gladly shared. 

About a month ago, as the temperatures kept rising, I wanted to make this chickpea tuna salad again but could not find the recipe. Alissa couldn't either! But she remembered better than I did. With her list of ingredients + rough amounts and my tinkering around, what emerged was this amazing, healthy, and summer-temp worthy "tuna" salad.

Maggie's All-Cuisines Salad Dressing

Well, we are mid-way through spring with hints of summer in the air. This means that it is time for our CSA again! I was *so* excited to sing our "CSA-day" song on the first week of pick-up. The joy at our CSA starting up again is also set against the backdrop of the global pandemic that rages on. Indiana has slowly begun to open up, but we're still very wary about heading to restaurants and we've only been going to the store every three weeks or so. Our weekly CSA box has dramatically expanded our access to fresh veggies, especially leafy greens! Seriously, we've gotten lettuce mix, heads of lettuce, kale, Swiss chard, arugula, braising greens, and micro-greens, plus turnips, radishes, and the first bit of asparagus; it's magical.

With so many leafy greens to eat, we've been finding new ways to eat them. Shana has been craving tikka masala with regularity, which is fine by me since it is delicious. A leafy green salad is a wonderful companion. When we first confronted the combination of tikka masala and salad, I looked at the dressings in the fridge and didn't love any of the possible taste combinations. So obviously, I made up my own! 

While originally intended as a lovely accompaniment to flavors in Middle-Eastern dishes, this salad dressing works beautifully with every flavor profile we've tried. It's a fast, easy, and tasty dressing for salads with any meal.

Protein Breakfast Cookies

Shana and a group of friends have started a once-a-month brunch. When she told me about the first one, I'd already planned another morning event, meaning I didn't attend. Coming home afterward, she proudly announced that we were hosting the second month. Fast forward and we are into month three.

Here's the problem: I'm running out of brunch recipes.

Let me clarify. I'm running out of brunch recipes that travel well and will be more or less a meal for me and Shana, as no one else in this group is vegan. I've got a few more ideas in mind, but I'll take any ideas you've got!

For tomorrow's brunch, I'm bringing these high-protein breakfast cookies. These were a recipe my sister-in-law was making when she was following a paleo diet. Shana tried them and loved them, so got the recipe for me. With a minor edit they became vegan and are absolutely delicious. There was a while when I was making a double-batch on the weekend so we could both grab a couple for breakfast during week. I just might have to start doing that again...

Maggie's Rice Skillet Dinner

If you're friends with me and Shana on Facebook, you've likely seen her tag me under a recipe or share something to my wall with "veganize this?" or "make this for me?" and nothing else. As it turns out, she does that outside of social media, too. Years and years ago, Shana used to have a subscription to a magazine that no longer exists, but it often included recipes that were easy and quick to prepare and targeted at families with children. Recipes would get torn out of the magazine and excitedly waved in my line of sight. Sometimes they were made right away, but often they went into the giant stack of recipes I want to try.

When looking for a new dish to make a while ago, I stumbled upon one of those torn magazine-page recipes. It looked good, especially with the tweaks I was envisioning to make it both vegan and a one-dish dinner. With approval from Shana to try something new, the rice skillet dinner was a go and resounding success! Nothing fancy, just warm comforting goodness for when you're short on time but still want a delicious meal.

Oh, and make sure to use your largest skillet! A 12" is a necessity (or cut the recipe in half)!

Maggie's Asian Salad with Sesame Dressing

Last summer I kept looking for new ways to eat food that also involved the least amount of heating in my kitchen I could handle. For me, the obvious solution was meal-sized salads, but I had to do a bit of Shana convincing... When I got a begrudging approval for a salad as dinner, I knew it had to be a good one. Luckily, I found a winner with this salad, filled with beautiful colors, lots of texture, and Asian-inspired flavors.

The recent hot streak we experienced this summer was the perfect impetus to see if this salad was still a dinner time success. It still was! Mix and match ingredients to your own tastes, buy a pre-made salad dressing if you find one you like, or do whatever - this salad will still be delicious.

Maggie's Vegan Charoset for Passover

Happy Passover, friends! As you've read in other posts on my blog, Shana was raised Jewish and I've been slowly developing a repertoire of traditionally Jewish foods. For example, I've got two recipes for kugel (sweet and savory), challah, matzo ball soup, and a faux brisket.

Both the frisket and matzo ball soup graced our table recently when we hosted our annual Seder for Passover. I *love* Seder. It's filled with tradition, symbolism, storytelling, and singing. It brings together an amazing group of people (we always bring in at least a couple of Seder newbies). Moreover, the fundamental message that's relayed is that no one is free until all are free. I love everything about all of that.

One of the symbolic foods eaten at a Passover Seder is charoset (huh-ROE-set), a lovely mixture of apples, walnuts, and other ingredients. I think of charoset the Italian red sauce of Seders - every family has their own traditional version, which they claim as the best. I'll stake my claim on that as well, because my charoset is so good you'll want to eat it other times of the year!

Richa's Peanut Lentil Sauce

As I do periodically, a few weeks ago I went digging through old recipes I'd saved or tagged or noted in some way or another. I came across one from a blog I've been following for a while, leaned over to show it to Shana, who responded with "why aren't we eating that right now?!" I got her subtle message and we had it later that week.

While we both loved it, I realized I needed to make it again to make sure that the notes I'd jotted down about adjustments while cooking were actually correct (more than one note was a I-think-that's-what-I-remember-doing note). I'm thrilled to say it's still amazing. In the time it takes to cook rice in the instant pot and lentils on the stove (aka, less than 30 minutes), you can make a hearty, beautiful, flavorful meal that tastes like it belongs at a fancy dinner party.

Seitan Nuggets

You know the videos that get shared on social media sites? The ones that show a pair of hands cooking a dish from start to finish in a minute or so? That's where I found this recipe.

Of course, for the life of me, I can't find that video any longer. If you find it, let me know so I can cite it, will you? Luckily, I watched the video a few times and wrote down the recipe/instructions. Then I put the paper in my stacks of recipes and promptly forgot about it.

Sometime this winter I got sick of everything we were eating, went digging through one of my "you should try this" stacks of recipes and found my scribbled notes for these seitan nuggets. They went on the meal plan for that week, dipped in barbecue sauce, and then they were gone.


We ate all of them. We did it again a few days later, and the next time, and the next. So worth it.

Maggie's Vegan Cheesy Taco Mac

So... we went to a mac & cheese party this past weekend. No joke. Sounds like a weird place for a vegan to go. Nevertheless, go we did.

The mac & cheese party was hosted by Shana's former principal and her husband; it was their second annual mac & cheese party. They held their first event last year because getting tickets to the Indianapolis Return of the Mac festival was apparently really difficult. Our hosts planned very well! The party had 14 entries, which party goers tasted in small cups that rested perfectly in holes drilled into clipboards. This allowed you to take notes as you ate. After eating them all, you voted* (via google form) for your favorite entry in three categories: best overall, most innovative, and most gourmet.

After deciding to go, we debated just going for fun, but then Shana reminded me that she'd asked me to veganize a cheesy taco mac recipe she saw in one of those food videos. My first attempt to make this dish was a delicious success, but we hadn't had it in over a year! I was intrigued with the idea of adding a vegan entry to the mac & cheese party, but decided I needed to test it once more. A second successful result (with a few tweaks from the first) made me confident it would be okay as an entry.

As it turned out, we didn't win, but came in third in the best overall category and had the second most votes overall! Moreover, people didn't know it was vegan until Shana announced it after the votes were tallied. All in all, that makes this a winner in my book.

Lazy Dinner Paustages (Pasta and Vegan Sausages)

Sometimes a Lazy Dinner is just what you need.

The past few weeks have been incredibly busy for us. For two weeks straight, we had something on the calendar for every single night (and weekend days, too). Part of the busyness includes the classes Shana is taking, part of the busyness was due to the festivities surrounding the inauguration of Earlham's 18th President, and part of the busyness is that we like to see our friends. I loved all of our activities, but I also love that things have calmed down just a little, and we have the occasional evening with flexibility. Tonight was one of those nights.

We'd planned for easy meals all week (mostly), just because I knew that I wasn't going to want to spend a lot of energy on making dinners after all that we'd been doing. This dinner, paustages, was one we'd not had in a long time. It was quick and delicious; just perfect for hectic nights.

You may be wondering why we call this dinner paustages. Well, it's mostly because I love playing with words. While not a perfect example (we took some liberty with letter order), our made up dinner name is essentially a portmanteau, which is the combination of two words and their meanings. Common examples are things like smog (smoke + fog) or brunch (breakfast + lunch). Plus, paustages is just fun to say!

Southwestern Salad with Cumin-Lime Vinaigrette

It's a long story, but a few weeks ago we were gifted with a number of salad kits - you know, the kind that have all the ingredients inside the bag and all you have to do is mix them together.

While the free salads were nice, none of the included salad dressings were vegan-friendly. I decided I'd make up my own dressings to coordinate with the ingredients in the bags. My first attempt at a dressing for one of the salads was a smash hit with me, Shana, and some friends of ours who just had a baby (we took them lunch). I made it again with the second kit and it was just as good.

We've been all out of the salad kits for a while, but I had a craving for this salad. After a quick search of my local grocery store, I realized I could get all the ingredients and could just make my own! This simple,healthy, and delicious salad is great for warm summer days.

Maggie's Vegan Massaman Curry

I love Thai food. When Shana and I have something to celebrate, or have people in town visiting, or just a craving for an amazing dinner, we head to Thai 9 in Dayton. In the past two months, we've gone 3 times. Once when my family came to visit, once when Shana's family came to visit, and once to celebrate that I'd been awarded tenure!

While everything there is delicious (we think they must have a wall of avocados because they are always ripe), there's one dish they can't make vegan for me: massaman curry. Their recipe includes half & half and fish sauce. After feeling sad about missing out on massaman curry, I figured I would try to make my own.

In my explorations of possible recipes online, so many had ingredient lists full of things I knew I couldn't get in my town. I started feeling a bit hopeless. But then, one of the recipes I saw had an aside about a really good pre-made curry paste that was also vegan! I jumped on the chance to have massaman curry in my own kitchen and purchased two cans from Amazon. I didn't need to make this more than once; I ordered more the next day. Now I can have massaman curry whenever the mood strikes.

Vegan Teriyaki Boats

On summer nights, I can't bring myself to heat up my kitchen. But as hot days and warm nights stretch on, I also get sick of grilling dinners and Shana wouldn't be satisfied with continuous salads. This means a recipe that can satisfy the requirements of not heating the kitchen, not using the grill, and not being a salad is a huge win for our summer eating.

This particular recipe was in a special recipe collection called "Best Vegan Recipes" published by Vegetarian Times magazine (which now exists in an altered state under the title Vegetarian Today; I no longer subscribe). Shana and I had been standing in line at a grocery store and saw this special collection. While waiting to check out, I perused it and found so many recipes I wanted to make that we ended up purchasing it.

These teriyaki boats are ridiculously fast and easy - so much so that Shana has made them - and they are delicious and healthy. Everyone we've served them to has enjoyed them and I can see them being quite flexible, if you wanted to add/remove ingredients.  Serve them as a lunch, a light dinner, or even as an appetizer (see Helpful Hints).

Lazy Dinner Quesadillas

It's been quiet around these here parts, huh? I've got all sorts of backlogged recipes, plus, when spring rolls around I get sick of everything we've been eating over the winter, but still no blog posts. Sad for me (and you!).

But, here's a quick and easy Lazy Dinner (or lunch or snack or appetizer or whatever) to tide you all over until I actually get around to posting real things: quesadillas.

Lazy Dinner Quesadillas were something I would periodically eat when Shana was still working in Indianapolis. Without a plan to come home and make/eat dinner, I would often stay at school until mid-evening and then come home famished. I needed something that would fill my tummy in as little time as possible. By relying on a few convenience foods (e.g., vegan cheese shreds and store-bought tortillas), all I needed was a veggie or two (or three) to throw into the mix. Into a hot pan went my ingredients and a satisfying dinner emerged in under 5 minutes.

This particular LD Quesadilla was prompted by just a few caramelized onions left over from mujaddara we had with friends a few nights ago. The onions are soooooo good that we just couldn't waste them. Adding a few ripped spinach leaves and some vegan cheese and I was all set.

Vegan Viands #19: Maggie's Vegan Ranch Chex Mix

Every late fall/early winter growing up, my mom would make chex mix. It was a frequent snack and even more frequent gift - going to teachers, neighbors, and friends. The smell and taste of that chex mix is unmistakable. It is one of those recipes that is so easy and delicious, taking just a bit of patience for a long, slow bake and seemingly longer cool. Although her recipe wasn't vegan, it was easily veganizable, meaning that I make my own every year.

Because of the ubiquity of my mom's chex mix, I thought that was the only way to take the on-their-own unremarkable cereals and make them into something magical.

As it turns out, I thought wrong.

Growing up, Shana often had a ranch-flavored chex mix. While similar in idea, the chex mix in Shana's recollection involved a ranch seasoning packet and oil, no bake time, and thus, no cooling time. This fall, when I expressed an interest in making my version, Shana requested that I attempt to make hers. After some googling, including to assess the ingredients of a ranch packet (so not vegan), I made an attempt. It was...not right. Fine, but not right. After some discussion, I made another version and brought it with us on a trip to see all our best friends. That version was delicious - not to mention gone in no time once we arrived.

So, if you're a vegan adult with memories of a ranch-style chex mix, look no further. This takes less than 5 minutes to prepare and will last a bit longer than that if you make sure to hide some from the masses.

Thomas Family "Special Syrup"

Every once in a while, you want a special treat for breakfast, like cinnamon rolls or candy coated clouds. But sometimes, with a busy week behind you, a full day ahead, and the semester looming, you just want something to make a more typical weekend breakfast a bit special. You want "special" without the effort "special" often requires. I have just the thing for you.

When I was growing up, we would have waffles or pancakes for weekend breakfasts with regularity. Nearly all of the time, those treats would be covered with maple syrup. But every so often, my dad would say that he was going to make "special syrup" for us to pour over our waffles. This pronouncement was met with glee! I assumed that special syrup was an occasional treat because it was labor intensive - I couldn't have been more wrong! This syrup recipe is all of the "special" with next to no effort. Instead, with three simple ingredients and about six minutes of your time, you'll be able to drench waffles in a delicious syrup with at least a three generation family history* (granted, I made mine vegan).

Served this morning with hash browns and Amy's brand vegan breakfast sausages (because Shana is obsessed with them).

This was just what I needed the weekend before my semester starts in earnest.
